Yes, we’re serious. Félix & Norton cookies are already so delicious and indulgent, but we wanted to challenge ourselves with a recipe that’ll really send you smiling. Deep-fried to a golden crisp, these discs of indulgence will have you deep-frying all your desserts!
INGREDIENTS:

1 1/4 cups all-purpose flour

1 cup water

1 large egg

2 tsp baking powder

1/2 tsp salt

1 tbsp icing sugar, plus a little (or a lot) for dusting

12 Félix & Norton cookies, freshly baked (according to package directions) and cooled

1 litre canola or peanut oil, for frying

Prep Time: 40 minutes
Cook Time: 20 minutes
Yield: 12 impossibly delicious deep-fried cookies
DIRECTIONS:
In a medium bowl whisk together the flour, water, egg, baking powder, salt and 1 tablespoon of icing sugar until smooth.
Let this mixture chill out in the refrigerator for 30 minutes.
To a heavy bottomed sauce pan, add about 1 inch of a neutral oil, like Canola.
Heat oil to 375°F (190°).
Gently dip your favourite flavour of Félix & Norton cookie into the batter, coating completely to ensure optimal deep-fried goodness. Carefully lower the cookie into the oil and fry until golden on one side; about 3 minutes. Gently flip over and continue frying; 2 minutes. To avoid soggy cookies, only fry as many cookies at once that will fit comfortably in your pan!
Using a slotted spoon, remove cookies from the oil, then place on a paper towel-lined plate of your finest china - these cookies deserve the royal treatment.
